Ok. Here’s the deal! I am going to show you easy ways to eat well! That’s right! And if there was just one sentence I could say to lead you in the right direction for health, it’s “Eat more vegetables and fruit!!!

Why? Because they are the foods that contain all the phytonutrients, vitamins, minerals, flavonoids antioxidants and fibre. These are the foods that will have you ‘glowing’ from the inside.

So to inspire you, here is my first vegetable recipe. Roasted vegetables with Greek Yoghurt in a toasted Wrap!

Ingredients

Sweet potato, zucchini, squash, pumpkin, mushrooms, broccoli, carrots, cabbage, red, yellow or orange capsicums, tomatoes cut in half, Spanish onions (which ever your favourites are, but make the baking dish look colourful. The more colours, the greater the variety of nutrients you are getting)

Method

  1. Preheat the over to 180C/350F
  2. Spray some olive oil in a baking dish.
  3. Cut vegetables into appropriate sizes so they all cook in the same time.
  4. Place in baking tray and spray some olive oil on top.
  5. Add fresh rosemary if desired.
  6. Bake at 180C/350F for 40 minutes.
  7. Take out of the oven.
  8. Place in a wholemeal wrap that you have toasted lightly in a fry pan and top with Greek Yoghurt.

Super good for you and totally delicious! Makes a great lunch or dinner. We have even eaten leftovers for breakfast here on occasion.
This is a great way to keep your family healthy. Add chicken or some slice beef or lamb if you wish. My son just has to add BBQ sauce!
