Quinoa Salad Recipe

  • 1 cup quinoa
  • 1.5 cups of chicken broth or water
  • Healthy Quinoa Salad1 cube crushed garlic
  • 1 finely chopped onion
  • 1 sweet potato cubed and roasted
  • 1 handful of currants
  • 1 handful of pisatchios
  • Chopped mint and lots of chopped parsley, salt (I always use iodised salt so that everyone gets their iodine quota for the day) and pepper to taste.

Directions

Lightly toast garlic and onion in some olive oil on the stove. Add pistachios and quinoa and stir for 5 mins on low heat.
Add broth or chicken or vegetable stock/water and simmer for 20-25 minutes until cooked. Fluff with a fork
Toss into a serving bowl with other ingredients and enjoy!
