First night of the opening Football Season the other night and my adult kids were coming over. I had been at work since 7am and so had to pick up something easy to prepare on the way home at 6pm. How many times have you been in this situation? What
to cook that’s easy but healthy?
They all arrived after a session at the gym after work, and so they were starving. What better than getting the men to BBQ some delicious steaks. I only eat a little bit of steak, but the men prefer about a 200g fillet each. With it I served a big salad with as many colours in it as possible different lettuces, different coloured sliced capsicums, all different types of tiny tomatoes, artichokes, fetta,

cucumber, fresh basil from the garden, Spanish onions and black kalamata olives. I made a salad dressing of olive oil, balsamic vinegar, a touch of sugar and some finely ground black pepper and a dash of sweet chilli dressing.
With it a big bowl of quinoa with cubes of roasted sweet potato, finely diced onion, a handful of currants, lot of finely chopped parsley and a little mint out of the garden, and shelled toasted pistachios. If I don’t put olives in my salad, I put them in the quinoa.
Quinoa Salad Recipe
- 1 cup quinoa
- 1.5 cups of chicken broth or water
- 1 cube crushed garlic
- 1 finely chopped onion
- 1 sweet potato cubed and roasted
- 1 handful of currants
- 1 handful of pisatchios
- Chopped mint and lots of chopped parsley, salt (I always use iodised salt so that everyone gets their iodine quota for the day) and pepper to taste.
Lightly toast garlic and onion in some olive oil on the stove. Add pistachios and quinoa and stir for 5 mins on low heat.
Add broth or chicken or vegetable stock/water and simmer for 20-25 minutes until cooked. Fluff with a fork
Toss into a serving bowl with other ingredients and enjoy!
Healthy, easy, delicious!
